Healthy Summer Pasta Dish
I am all about easy, healthy pasta dishes and this one totally fits the bill! It has a bunch of delis ingredients (which you can sub with whatever you have around) and you won't spend hours sweating it out in the kitchen- even if it tastes like you did! Recipe after the jump!What you need:
whole grain or wheat penne
2 cups cherry or grape tomatoes
1 cup spinach
1 table spoon minced garlic
1/2 cup olive oil
parmesan cheese to taste
salt and pepper to taste
What to do:
Cook pasta according to directions. While pasta is cooking make sauce by adding olive oil and minced garlic to a sauce pan on medium heat and cooking until fragrant. Then add halved cherry tomatoes and cook for 2 minutes, then add spinach and cook for two more minutes. Mix in some salt and paper. Toss with pasta and top with parmesan cheese.
